MADDIE DAY here. It’s cold in New England. Half a pint of sour cream in my fridge was waiting to be used, and I had a hankering for a hearty stroganoff. But I also wanted something a little lighter than beef or chicken liver. When I happened by a scant pound of fresh salmon in my local market, my cook’s brain went to work.
