 I jumped at this recipe because we love kimchi. We first came
across the salted, seasoned, fermented vegetable Korean dish in the 80s in the
produce section of our local grocery store in the northeast corner of
Tennessee—hardly a cosmopolitan area at the time. It came in a large glass jar that
showed mostly cabbage leaves packed in a brine red with seasonings and spices.
